Three new recipes to try for Diwali

Each year Diwali is all about celebrating the new gifts and new blessings in our life. If its a new year with new blessings in your life, then why don't you try new recipes as well. 

 

Here are new unique recipes you can try to make your dinner a truly unique one from others! 

 

1. Mutton Beliram 

 

 

 

Ingredients:

  • 1 kg Mutton (assorted cut)

  • 1 cup Yogurt

  • 5-6 Onion, sliced

  • 1 tbsp Ginger paste

  • 1 tbsp heaped Garlic paste

  • 7-8 green Cardamom

  • 5 Cloves

  • 2 sticks 1 inch Cinnamon

  • 2 tsp Kashmiri mirch powder

  • 3-4 tsp coriander seeds

  • 3 or more tbsp ghee or clarified butter

 

 

Directions: 

 

  • Marinate the mutton with all the above ingredients except ghee and coriander seeds. Keep for a minimum of 2 hours in the refrigerator.

  • Heat ghee, add coriander seeds, let it crackle. Add mutton, cover and slow cook for 1 - 1 1/2 hours.

  • When mutton is well done and all liquid is absorbed,increase heat and bhuno the heat for 20-25 mins until the mutton changes colour and oil moves aside.

  • Absolutely succulent and melt in the mouth.

 

 

 

2. Kashmiri Pulao

 

 

 

 

Ingredients: 

 

  •  - washed and soaked

  • 1/2 tsp cumin seeds

  • 3 cloves

  • 1 stick cinnamon

  • 3 cardamom

  • 1 bay leaf

  • 2 cups milk

  • 1/2 cup fresh cream-beaten

  • 1 tsp sugar

  • Salt to taste

  • 2 Tbsp ghee

  • 1/2 cup dried fruits (cahew nuts, almonds, raisins)

  • 2-3 edible rose petals

 

 

Directions:

 

  • Mix milk, cream, sugar, salt.

  • Drain rice, keep aside.

  • Heat ghee in a heavy pan and add cumin seeds, cinnamon, bay leaf, cardamoms, cloves.

  • When they splutter add rice and fry in ghee for 2 minutes.

  • Add milk mixture and 1/2 cup water.

  • Bring to a boil,cover, lower the heat and simmer till cooked.

  • Mix in dried fruit very gently.

  • Serve hot, garnished with rose petals.

 

 

3. Rava Kheer

 

 

 

Ingredient: 

 

1) 1 cup Semolina

2) 4 cup Milk

3) 1 cup Sugar

4) 1 cup grated fresh coconut

5) 4-5 cashew nuts

6) 4-5 Raisins (Kismish)

7) 2 tbsp. ghee

8) Cardamom Powder

 

Directions: 

* Heat ghee in pan, add semolina and roast till it changes colour or till you get nice aroma.

* Bring milk to boil and simmer on medium heat. Add milk to the roasted semolina and stir continuously to avoid lumps.

*  Prepare on high heat till it comes to boil.

* Add grated fresh coconut, sugar and simmer for another 4 minutes.

* Add raisins, cashew nuts, cardamom powder and once again mix well.

* Garnish with dry fruits and serve hot or cold.
